Pumpkin Cake with Whipped Cream Cheese Icing

Good morning! Thank you so much for all of your comments and emails yesterday, I am blessed to have found so many kindred spirits through blogging and I am humbled by your kind words and sentiments. 



I had a fabulous birthday. My mother is here visiting and we had a ladies day of antique shopping and lunch. Then it snowed which is a rare treat from Mother Nature in my next of the woods. Sadly, it did not stick to anything but it was beautiful swirling around. And finally we ended the day with a piece of cake and a glass of champagne. 




Often times I have a chocolate cake for my birthday which I bake it myself, but this year my mom made me this scrumptious Pumpkin Spice Cake from Country Living. My mom hasn't baked my birthday cake for over 15 years so this was an extra special treat! A birthday cake baked with love, is there anything better?

This cake is moist, spicy and delicious. I think it would make a great dessert for Thanksgiving or Christmas. 

As this is my moms last day visiting I am going to cut this post short and enjoy my time with her. I hope that you have a great day! Thank you again.
