Lemon Blueberry Pound Cake


Good morning! How was your 4th of July weekend? Mine was FABULOUS! 
My husband had been out of town for work for the entire week and it was so nice to have him at home, not to mention an extra set of hands to handle the growing pack of pups we have amassed. We went to the beach, visited friends, went to barbeque's and spent some quality time together, it was nice and relaxing. 






Although I did not bake this Lemon Blueberry Pound Cake for us, my friends who had a large group of family in town for the weekend loved it. I mean what is not to love, a good old southern pound cake recipe with the addition of succulent summer blueberries and lemons? 





The recipe is actually an old favorite from Better Homes and Gardens Magazine which I made a few changes to. I think you would love it as originally published or with the addition of a few summer fruits.





Lemon Blueberry Pound Cake

1/2 cup butter
3 eggs
1/2 Greek yogurt
11/2 cups of flour
1/4  teaspoon of baking powder
1/8 teaspoon of baking soda
1 cup of sugar
1 teaspoon vanilla
Zest and juice of 1 lemon
1 pint of blueberries


Directions:

Make sure butter, eggs and yogurt are at room temperature for no less than 30 minutes. Preheat oven to 325 degrees.. Grease and lightly flour a loaf pan, then set aside. In a medium bowl whisk together flour, baking powder, and baking soda, then set aside.

2. In a mixer fitted with a paddle attachment mix butter on medium-high for 30 seconds, the add sugar, mixing on medium speed for about 10 minutes until mixture is light and fluffy. Add vanilla, then eggs one at a time, beating the mixture for 1 minute after each addition. Scrape sides of bowl frequently to be sure that eggs are incorporated.

Then add flour mixture and sour cream alternately, beating on low speed until just combined. Add juice and zest of lemon, mix well. Then fold in blueberries. 

Pour into prepared pan, and bake for 60-70 minutes until a toothpick comes out clean.





Are you a Pound Cake fan? I think it is really the perfect Summer dessert because you can serve it plain, with a glaze,with macerated berries or add any berries or flavor that you like to the mix, you could even add ice cream, or whipping cream.
