Just Curious...What is Your Favorite Fall Drink?




Good morning? Fall is definitely in the air, and at the markets. There are pumpkins, gourds, mums and every manner of Halloweeen decoration. I have my pumpkins and mums but that is about as far as I go. I am really more about the nesting/hibernating aspect of Fall and Winter. Which leads me to this question, what is your favorite Fall drink?

Decadent Hot Chocolate

I do not drink coffee, never have, so coffee drinks are out for me. I do enjoy a nice cup of tea but for the most part, any and all hot chocolate, especially drinking chocolate is my beverage of choice on a cool crisp morning or a cold winter night. Fall Spinach Salad with Pumpkin Vinaigrette




Good morning! How was your weekend? Mine was so relaxing and for the first time this season it actually felt like Fall. I went to yoga, read, went for a 7 mile walk and relaxed. Sadly I did not bake this weekend as I am trying to loose the few pounds I gained from my gluttonous summer. I am normally a pretty healthy eater but this summer I was not very good, truth be told I ate terribly.  So I have to get myself back in line before all of the holidays and the baking begins. 





This week I did have this easy salad so I thought I would share. This is not a recipe because basically you throw it all in a bowl and dress it with your favorite vinaigrette, I made pumpkin vinaigrette and it was delicious!






Fall Spinach Salad with Pumpkin Vinaigrette
Serves 2

4 cups spinach
1 honey crisp cored and sliced
8 slices cucumbers
2 Tablespoons pecans
2 teaspoons dried cranberries
2 tablespoons crumbled cheese

Pumpkin Vinaigrette 

4 Tablespoon pumpkin puree
1/4 cup cider vinegar or balsamic vinegar
1 clove garlic
1 teaspoon dijon mustard
1 teaspoon honey or maple syrup
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup olive oil

Finely chop garlic and put into a bowl with all of the ingredients EXCEPT the oil, whisk the ingredients. Then slowly add the olive oil and whisk well. You must add the oil slowly and whisk well otherwise the dressing will separate.

Happy Fall y'all! I cannot believe it is already the start of the holiday season, can you? It seems like it was just the start of the new year, already I am making plans for 2017! This is my favorite time of the year and I cannot wait to enjoy the changing colors, Fall foods, harvest festivals and all that comes with this season.

Fall in Love with Fall on My Pinterest Boards

Good morning! Happy hump day. How is your week going? I am having a great week, the weather is stormy and dark and while that would be depressing for some I am enjoying a respite from the heat. There has been no actual fall like weather to inspire my creative juices but thats ok because inspiration is everywhere, at the market, on the blogs, Instagram and of course Pinterst




As Fall is one of my favorite seasons I actually have two boards dedicated to it. One " Fall" which contains drinks, savory foods, fall decorating inspiration, the colors of fall, quotes, fashion and so much more.

Chocolate Pumpkin Cake with Hershey's Chocolate Frosting and Candy Corns






Good morning! How was your weekend? Mine was great, we went to the beach, made grilled pizza, read and relaxed. I also made this scrumptious Chocolate Pumpkin cake with chocolate frosting and candy corns! Bring on Fall!







Chocolate Pumpkin Layer Cake with Chocolate Frosting and Candy Corn Decoration
Cake recipe from I am Baker

11/2 cups flour
2/3 cup cocoa
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup of buttermilk, room temperature
1 cup canned pumpkin
1cup brown sugar
1 cup white sugar
1 tablespoon vanilla
3/4 cup butter, room temperature
4 eggs, room temperature

Cake Directions:

Heat oven to 350 and prepare 8" round, or square pans with cooking spray. Line bottom with parchment paper for easier removal.
In a medium bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
In a small bowl combine buttermilk,  and pumpkin and mix together until incorporated. 
In a mixer, beat together the sugars, butter and vanilla until light and fluffy. Then add the eggs, one at a time until fully incorporated. 
Alternately add the flour and the buttermilk mixtures to the sugar mixture, beginning and ending with the flour mixture. 
Mix on low for 1 minute, until fully combined then divide batter between the pans. Bake for 18-26 minutes. The cake is done when a toothpick inserted into the center comes out clean. Let cool on wire rack for 5 minutes then remove from pan and let cool.

Frost cake with Hershey's Perfectly Chocolate Frosting or your favorite frosting. Then decorate with candy corn candy in whatever way you like.






I think that you will love this cake even if you do not like pumpkin, the pumpkin does not alter the chocolate flavor, it simply makes the cake more moist. So basically this is a delicious chocolate cake with creamy chocolate frosting and candy corn decorations.

Good morning! How are you and how was your week? Have you been having any cool, crisp nights and beautiful Fall weather yet? We haven't yet so I have been savoring the sunny days because soon I will be complaining about the cold.

Just curious...How Do You Take Care of Yourself?

I am curious, how do you take care of yourself? Do you work out, practice yoga, attend pilates or perhaps you are a runner or walker? Do you meditate, practice mindfulness or do you take the time to enjoy complete stillness?





What about your diet? Do you eat healthy or do you eat whatever you want? Do you feel healthy? If yes what are you doing to stay there and if not what could you do to feel better?




Aside from your body are you keeping your mind healthy as well? Are you learning new things as you age? Do you read, play games, learn languages, play an instrument?





I will be 50 in November and although I am not bothered by aging I have decided that I want to be the best version of myself as I age.  So I have made myself a priority. I now attend hot yoga classes daily and it is the most physically and mentally challenging thing I have ever done. I also love walking, hiking and snowshoeing. I wear a Fitbit and I try to get a minimum of 10,000 steps a day. 




I am learning to meditate, even if it is only for 5-10 minutes a day. I try to come to stillness, which in itself is a challenge, and to clear my mind of the clutter to rid it of the negative and stressful things that might be dragging me down. 





I am making an effort to eat better 80% of the time. I have found that as I age my body does not like certain things anymore, like too much gluten or dairy. Now more than ever my body is teaching me what it needs to be healthy and when I eat badly I pay the consequences. Don't get me wrong I still eat sweets and pizza just not as frequently. 





As for my mind, I have always been a life long learner, my mind is filled with facts and information that I may only need if I am on Jeopardy but I don't care because I love to learn new things. I love puzzles and word games but I hate scrabble and to be honest I have never played a video game.  I would rather read than watch tv and enjoy listening to podcasts.





I am however not very social, in fact I am sure in a former life I was a hermit. I have to work on that because they say that the more active your social life as you age the better you feel and it keeps your mind and body young.
