Lemon Slice and Bake Sugar Cookies

Good afternoon! I am back after a few days with friends and I have to tell you that it felt great to unplug. I did not turn on my computer, and I turned off all forms of social media so that I could really enjoy my time with my friends. 

A couple of weeks ago I made these scrumptious Cuban Sugar Cookies. Since then I have been trying all sorts of slice and bake cookies that I can have in the freezer to bake up at a moments notice for bbq's, summer parties and friends stopping by for drinks. 




One of my new favorites are these lemon slice and bake sugar cookies, you simply make the dough, chill it, or freeze it for a later date, then slice, bake and enjoy!





Lemon Slice and Bake Cookies 
Recipe from Pastry and Beyond

Ingredients

2 cups All-Purpose Flour
1/2 cup plus 1 tablespoon unsalted butter at room temperature cut into cubes
1/2 cup granulated sugar
2 tablespoons lemon juice
2 tablespoon lemon zest
1 large egg

Directions

Place the lemon zest and the sugar into a bowl and mix well. Add the butter and cream well using a hand mixer or a stand mixer fitted with a paddle attachment until light and fluffy. Add the egg and mix, the add the lemon juice and mix until combined. Lastly, add the flour on low speed until incorporated.

Divide the dough into two pieced and place one piece at a time onto plastic wrap, form into a long roughly 6" x 2" thick. Wrap the logs in plastic and place into the freezer for  for 40 minutes of the refrigerator for 4-5 hours. When ready to bake preheat the oven to 350, line a baking sheet with parchment paper and slice logs into 1/5" thick slices. Place slices onto baking sheet and bake for 6-7 minutes. Then turn off the oven and bake for an additional 5 minutes. Remove from oven and cool on a rack. Enjoy!




I like to place my cooled cookies in clear treat bags, or bags decorated for the appropriate season and time them with colored cord. Or you can place on a vintage plate or tray and give as a treat to a friend or to take to a party.
