No Churn Pistachio Ice Cream

Good morning! How is your week? Mine is going well. I am getting a lot done as I am staying put at home because of the rain and flooding. I know many have had the same sort of weather lately hopefully you are not letting it disrupt your summer too much. 






Warm summer days call for a cool dessert. As a child I loved lemon ice and drum sticks from the ice cream man. My palate has expanded as an adult and one of my favorite things to eat and make is pistachio ice cream. Gone are the days of rock salt and churning the machine by hand, in fact for this delectable treat there is no churning needed. This week I made some scrumptious no churn pistachio ice cream and you might enjoy it as well because it is so easy and delicious. 



No Churn Pistachio Ice Cream
Recipe from The Sweetest Escape

Ingredients

2 cups heavy whipping cream
3/4 cup shelled and chopped pistachio nuts

Directions:

Whip the heavy cream until stiff peaks form.
In a separate bowl combine the condensed milk, the pudding mix and 1/2 cup of the pistachios. Mix well.

Fold the heavy whipping cream into the pistachio mixture, if you want you can add food coloring to turn the ice cream to the shade that you prefer. Pour mixture into a loaf pan and cover well with plastic wrap.

Freeze the mixture for at least 8 hours. Garnish with extra pistachios and enjoy.

  1. I have very few kitchen appliances or gadgets, and certainly not an ice cream maker, so no-churn recipes catch my eye. I made a simple one--vanilla--that used heavy cream and sweetened condensed milk, but not pudding mix (not found in France). What was special was that they poured a bit of the mixture into the loaf pan (and to get it out easily, line the loaf pan with plastic wrap that extends well out of the pan and you can fold it over on top). Then there was a layer of shaved chocolate, a layer of ice cream mix, a layer of berries, and more ice cream. When taken out and cut rather than scooped, it was gorgeous.

  3. I've seen these no churn recipes on Pinterest, but have never tried them. This looks like a good treat for a hot afternoon.
