Easy Chia Pudding With Roasted Cherries and Chocolate Sprinkles

Good morning friends! It has been a crazy week so far, lots of contractors here and a few mishaps. Unfortunately our internet, cable, phone line was cut in the installation of the fence, which while inconvenient was also very nice because it gave use a day and a half to catch up on things that needed to be done that all too often get pushed back by too much screen time. 

Chia Pudding


Everything is fixed now, the fence is installed, landscapers are coming in few days to aerate the grass, seed and then add sod to some other parts where we removed 17 year old shrubs and 4 trees. After that a fire-pit, and landscape plans. I am not sure how much landscaping is going to go in this year, I want to take my time and see how I want to use the space. 

Today I have a super easy and by easy I mean 3 ingredient pudding(not counting the topping) that I think you will love, Roasted Cherry Chia Pudding Sprinkled with Chocolate. You can eat it for breakfast, lunch, dinner and dessert. 



Chia pudding roasted berries

This chia pudding is gluten free, vegan, has fiber, protein and is not only good for you but delicious and versatile. I make it every week plain and then we add whatever topping we like, it is delicious either way. You might want to try my roasted blueberries as well if you don't like cherries or if you want a variety of toppings. 


Chia Pudding

Roasted Cherry Chia Pudding with Chocolate Sprinkles

Roasted Cherries

1 pint fresh cherries(pitted or not, your choice)

2 tablespoons of sugar

1/4 cup of water

Preheat oven to 450, in a small bowl mix the cherries and the sugar, pour onto a pan then drizzle with the water. Bake for 10-15 minutes. I watch them and like to take them out when there is still a lot of liquid but the cherries are soft. This is not a science, you can experiment and make them how you like. 

Chia Pudding

For each serving

2 tablespoon of chia seeds 

1/2 cup of almond, oat, coconut or any milk you like

1 teaspoon vanilla extract or honey

garnish with dark chocolate sprinkles

In a small jar add milk, then add the chia seeds, stir well making sure all of the seeds are mixed in. Wait 5 minuted and then mix again so that there are no pockets of seeds. Add the vanilla or the honey or whatever other sweetener you like and mix. Place in the refrigerator for at least 2 hours, preferably overnight. Remove from refrigerator top with cooled roasted cherries or fresh fruit and enjoy.

  1. Looks and sounds delish! I think you probably made the right decision, during this Covid thing, to stay put for awhile. You're safer that way I believe. Just think of all that would be involved with movers and such during this pandemic.
