Walnut Date Bread

Walnut date bread is an easy and delicious quick bread to enjoy with a cup of morning coffee or afternoon tea!

Good morning friends! How is your week? I am sure I am not the only one that is feeling a little anxious with all of the things going on, Covis-19, vaccinations, impeachment and life during a pandemic. At this point I am simply looking for ways to keep myself busy and distracted. 

Winter days, and most especially these winter days it is important take a little time for yourself to just relax, sit with a book and your favorite cup of cocoa or tea. By the way, yesterday was National Hot Tea day and January is International Hot Tea month and what better way to enjoy a cup of tea than with a little snack? Some people like their tea with biscuits but I prefer mine with a slice or two of bread, banana breadpumpkin bread or my new favorite walnut date bread. 

I made this Walnut Date bread yesterday and it is easy and delicious, especially warm from the oven slathered with butter. You could also eat it toasted and add jelly or syrup, whatever you like. I always double the recipe so that I can enjoy a loaf, share a loaf and freeze a loaf or two to enjoy later.  

This walnut date bread is moist, has a little spice from the cinnamon and nutmeg and a bit of nuttiness from the walnuts. 

Walnut Date Bread

Ingredients

1 cup chopped and pitted dates
1 teaspoon baking soda
3/4 cup boiling water
3/4 cup brown sugar
1 tablespoon butter. softened
1 extra large egg
1 teaspoon pure vanilla extract
11/2 cup all purpose flour
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
pinch of nutmeg
1/2 chopped walnuts(or pecans)

Directions

Preheat oven to 350.

Prepare 2 small loaf pans with cooking spray and line the bottoms with a piece of parchment paper for easy removal. 

In a small bowl place the chopped dates and the baking soda, add the boiling water and let sit. 

In a bowl of a stand mixer combine the sugar, butter, egg and vanilla. Then add the flour, cinnamon, nutmeg, salt, walnuts, dates and any water left in the bowl. 

Mix on low until combined then pour into prepared pans and bake for 40-45 minutes, or until a tester comes out clean.

Remove from oven, place on wire rack to cool. Let the bread cool in the pans for 10 minutes and them remove to cool on wire rack. Enjoy

Note: You can also add chocolate chunks, or chocolate chips and if you do not like walnuts than add pecans. 

If you are not a fan of cinnamon or nutmeg substitute the spice of your choice. I personally like to add a little more cinnamon than listed in the recipe. 

I used 7.5" x 4" pans.

  2. Looks yummy! I have a package of dates just waiting to be used. Can you please tell me the size of your small loaf pans? Thanks!!!!

    1. I used 7.5" x 4" pans. But you could also use 1 large pan and some mini ones as well. Whatever you do, only fill the pan a little less than 2/3 full otherwise it will overflow in the oven. I had that problem
